DNA Barcoding to Combat Mass Food Fraud

August 26, 2014 | Food fraud, the potentially dangerous adulteration or mislabeling of food, is a multi-billion dollar criminal enterprise. Regulators are taking advantage of technologies like DNA barcoding and Fourier transform infrared analysis to ID food products on a molecular level, but these methods have not been adopted quickly enough to make a serious dent in the international practice of food fraud.
